Banana Bran Muffins

Ingredients:
3/4 cup organic whole wheat flour
dash of salt
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 cup crushed bran flakes
1/4 cup Wholesome Sweeteners Zero
1 cage-free egg
3 over-ripe medium-sized bananas
Optional: 1/2 cup chocolate chips or chopped nuts

Directions:
Preheat oven to 350°F. Butter and flour a muffin tin. Whisk together whole wheat flour, salt, baking powder, baking soda, cinnamon and crushed bran flakes. In separate bowl, beat together Zero, the egg and bananas. Slowly add dry ingredients to wet mixture. Don't over mix. If you like, add in chocolate chips or nuts

Fill muffin tins two-thirds full. Bake for 20-25 minutes, or until toothpick inserted in center of muffins comes out clean. Yields 12 muffins.

Razzle Dazzle Berry Pie

Ingredients:
16 oz. package frozen blackberries
16 oz. package frozen whole strawberries
12 oz. package frozen red raspberries
1 cup Wholesome Sweeteners Zero
2 Tablespoons cornstarch (or tapioca starch)
1 tsp. almond extract
2 unbaked pie crusts

Directions:
Preheat oven to 400°F.
Defrost berries in a large mixing bowl. When berries are thawed, stir in Zero, cornstarch and almond extract. Mix gently, so as not to break up the berries. Place one unbaked pie crust in a pie pan, fill with berry mixture, then cover with the second crust. Flute edges with a fork and pierce several fork holes in the pie crust.
Put pie on a baking sheet and bake for 45 to 50 minutes until the pie is golden brown. If pie starts to brown too fast on the edges, put pie saver or strips of aluminum foil around the edges. Serve warm. Makes 8 servings.
